Impact of Food Poisoning Awareness on Safe Food Consumption Practices among University Students in Nigeria
Abstract
Food poisoning is an important public health concern that may result from the consumption of food contaminated by pathogenic microorganisms, toxins, chemicals, or other harmful substances. University students may be exposed to foodborne illnesses because of frequent consumption of meals prepared outside the home, inadequate food handling, poor storage conditions, unsafe drinking water, improper reheating, consumption of improperly prepared foods, and limited knowledge of food-safety practices. Food poisoning awareness provides students with information about common causes and sources of foodborne illness, routes of contamination, symptoms and complications, food hygiene, safe food storage, appropriate cooking and reheating, personal hygiene, safe water use, food purchasing decisions, and appropriate healthcare-seeking when food poisoning is suspected. Safe food consumption practices refer to behaviours adopted by students to minimize exposure to contaminated food and reduce the risk of foodborne illness, including selecting hygienically prepared food, checking food quality and storage conditions, consuming adequately cooked meals, avoiding unsafe food sources, observing appropriate food storage and reheating practices, maintaining hand hygiene before eating, and ensuring the safety of drinking water. In Nigeria, inadequate safe food consumption practices among university students may be associated with limited awareness, misconceptions about food safety, convenience-driven food choices, financial constraints, poor access to safe food outlets, and inadequate food-safety education. Effective food poisoning awareness may improve students' knowledge and encourage safer food-related behaviours. Against this background, this study investigates the impact of food poisoning awareness on safe food consumption practices among university students in Nigeria. The study is anchored on the Health Belief Model, Social Cognitive Theory, and the Knowledge-Attitude-Practice framework. The Health Belief Model provides a framework for understanding students' adoption of safe food consumption practices through perceived susceptibility to foodborne illness, perceived severity of food poisoning, perceived benefits of safe food practices, perceived barriers, and cues to action. Social Cognitive Theory emphasizes the interaction between knowledge, self-efficacy, observational learning, social influences, and environmental conditions in shaping food-safety behaviour. The Knowledge-Attitude-Practice framework provides a basis for examining how food poisoning awareness may improve students' knowledge and attitudes and translate these improvements into safer food consumption practices. Collectively, these theoretical perspectives provide a suitable framework for explaining how food poisoning awareness may influence safe food consumption practices among university students in Nigeria. The study will adopt a quantitative quasi-experimental research design. Primary data will be collected from undergraduate students in selected Nigerian universities using a structured self-administered questionnaire, food poisoning knowledge and awareness assessment, and standardized safe food consumption practice assessment tool. A multistage sampling technique will be employed to select universities, faculties or departments, academic levels, and eligible students. Where feasible, selected student groups or university settings will be assigned to intervention and comparison groups. Students in the intervention group will receive structured food poisoning awareness education covering common foodborne illnesses, causes and sources of contamination, symptoms and complications, personal hygiene, safe food handling, food purchasing and selection, proper cooking and reheating, safe food storage, prevention of cross-contamination, drinking-water safety, and appropriate healthcare-seeking following suspected food poisoning. Safe food consumption practices will be assessed using indicators such as selection of hygienic food vendors, consumption of adequately cooked food, checking food storage conditions, appropriate refrigeration and reheating practices, handwashing before eating, avoidance of visibly contaminated or improperly stored food, safe drinking-water practices, and appropriate handling of leftovers. Where feasible, observational assessments of selected food environments or food-handling behaviours may complement self-reported information. Descriptive statistics will be used to summarize students' sociodemographic characteristics, previous exposure to food-safety education, food poisoning awareness, and safe food consumption practice scores. Inferential statistical techniques, including chi-square tests, paired-sample tests, independent-sample tests, and multiple regression analysis, will be used to determine the impact of food poisoning awareness on safe food consumption practices. Where appropriate, practices before and after the intervention will be compared. Diagnostic tests will also be conducted to assess the reliability of the research instruments, model assumptions, goodness of fit, and robustness of the findings. The study is expected to find that food poisoning awareness has a significant positive impact on safe food consumption practices among university students in Nigeria. Students exposed to structured food poisoning awareness education are expected to demonstrate improved understanding of foodborne illness, sources of contamination, symptoms, and appropriate prevention strategies. Education is expected to encourage safer food purchasing decisions, improved attention to food hygiene and storage conditions, consumption of adequately cooked meals, appropriate reheating of leftovers, regular hand hygiene before eating, and safer drinking-water practices. Practical and scenario-based education may be particularly effective in helping students identify potentially unsafe food and make appropriate decisions when purchasing or consuming meals outside the home. However, awareness alone may not guarantee sustained safe food consumption because students may continue to face barriers such as limited availability of hygienically prepared food, higher costs of safer food options, inadequate refrigeration facilities, poor water and sanitation conditions, convenience considerations, and widespread unsafe food practices. Consequently, food poisoning awareness may be most effective when supported by improved food-safety standards, university food-vendor monitoring, access to safe water and sanitation facilities, food hygiene regulations, and regular student-focused health education. The study is expected to contribute to the literature on food poisoning awareness, food safety, food consumption practices, university student health, health education, environmental health, foodborne disease prevention, health promotion, and public health in Nigeria by providing empirical evidence on the impact of food poisoning awareness on safe food consumption practices among university students. The findings will provide useful information to the Federal Ministry of Health and Social Welfare, National Agency for Food and Drug Administration and Control, Federal Ministry of Education, universities, university health centres, environmental health authorities, food vendors, public health practitioners, health educators, development partners, and policymakers regarding strategies for reducing foodborne illness among young adults. The study will also provide evidence-based recommendations for strengthening food-safety education in universities, improving monitoring of food vendors around educational institutions, promoting safe water and sanitation, strengthening food hygiene standards, improving student awareness of foodborne disease risks, and encouraging sustainable safe food consumption practices among university students in Nigeria.
