Effect of Health Education on Knowledge of Food Allergies among University Students in Nigeria

Abstract

Food allergies are an important public health concern because exposure to allergenic foods may result in mild to severe allergic reactions and, in some cases, life-threatening anaphylaxis. University students may be exposed to food allergens through meals prepared in homes, restaurants, cafeterias, food vendors, and social gatherings, yet some students may have limited knowledge of common food allergens, allergy symptoms, prevention strategies, and appropriate emergency responses. Inadequate awareness may increase the likelihood of accidental exposure, delayed recognition of allergic reactions, inappropriate responses, and preventable health complications. Health education provides an opportunity to improve students' understanding of food allergies, including common allergens, symptoms, risk factors, prevention measures, food-label interpretation, avoidance of allergenic foods, and appropriate responses to allergic reactions. Against this background, this study investigates the effect of health education on knowledge of food allergies among university students in Nigeria. The study will be anchored on the Health Belief Model, Social Cognitive Theory, and Health Literacy Theory. The Health Belief Model explains how students' perceptions of susceptibility to food-allergic reactions, perceived severity, perceived benefits of preventive practices, perceived barriers, and cues to action may influence their knowledge and preventive behaviours. Social Cognitive Theory emphasizes observational learning, behavioural modelling, self-efficacy, reinforcement, and environmental influences in the acquisition and application of food-allergy knowledge. Health Literacy Theory emphasizes the ability to obtain, understand, evaluate, and apply health information to make appropriate health decisions. Collectively, these theoretical perspectives provide a suitable framework for explaining how health education may influence knowledge of food allergies among university students in Nigeria. The study will adopt a quantitative quasi-experimental or analytical cross-sectional research design. The study population will comprise undergraduate students aged 18 years and above enrolled in selected public and private universities across Nigeria. A multistage sampling technique will be used to select geopolitical zones, states, universities, faculties or departments, levels of study, and eligible students. Health education exposure will be assessed using indicators such as participation in food-allergy education sessions, frequency and duration of education, exposure to educational materials, knowledge of common food allergens, recognition of food-allergy symptoms, understanding of risk factors, awareness of cross-contact and contamination, food-label reading skills, knowledge of prevention strategies, understanding of emergency responses, and awareness of when to seek medical care. Knowledge of food allergies will be assessed using indicators such as identification of common food allergens, recognition of mild and severe allergic reactions, understanding of anaphylaxis, knowledge of allergen avoidance, interpretation of food labels, awareness of cross-contact, appropriate response to suspected allergic reactions, and knowledge of available medical interventions. Data will be collected using structured questionnaires, food-allergy knowledge assessment instruments, educational materials, and pre-test and post-test assessments where a quasi-experimental intervention is adopted. Descriptive statistics will be used to summarize students' demographic characteristics, previous exposure to food-allergy information, sources of health information, and levels of food-allergy knowledge. Inferential statistical techniques, including chi-square tests, t-tests, correlation analysis, and logistic or multiple regression analysis where appropriate, will be used to determine the effect of health education on knowledge of food allergies. Where a quasi-experimental design is adopted, knowledge scores before and after the health education intervention may be compared with those of a comparison group to determine changes associated with the intervention. Diagnostic tests will also be conducted to assess the reliability, validity, and robustness of the findings. The study is expected to find that health education has a significant positive effect on knowledge of food allergies among university students in Nigeria. Students exposed to structured and practical food-allergy education are expected to demonstrate better knowledge of common food allergens, symptoms, risk factors, prevention measures, food-label interpretation, and emergency responses than students without comparable exposure. Practical education may improve students' ability to recognize early symptoms of allergic reactions, identify potentially dangerous situations, avoid accidental exposure, understand cross-contact, and seek appropriate medical attention when necessary. Increased knowledge may also help students make safer food choices and respond more appropriately when a peer or colleague experiences an allergic reaction. However, limited awareness, misconceptions, inadequate access to reliable health information, cultural and dietary practices, limited availability of allergen information in food establishments, and inadequate access to emergency healthcare services may reduce the effectiveness of education alone. The study therefore expects accessible, practical, evidence-based, and continuous food-allergy health education to contribute significantly to improved knowledge of food allergies among university students in Nigeria. The study is expected to contribute to the literature on food allergies, food safety, health education, health literacy, allergy awareness, emergency preparedness, student health, nutrition, health promotion, and public health in Nigeria. The findings will provide useful information to the Federal Ministry of Health and Social Welfare, Federal Ministry of Education, universities, student health services, healthcare professionals, dietitians, nutritionists, food vendors, public health practitioners, development partners, and policymakers regarding strategies for improving food-allergy awareness among university students. The study will also provide evidence-based recommendations for integrating food-allergy education into university health-promotion programmes, improving awareness of common food allergens and allergic reactions, strengthening food-label literacy, promoting safer food-handling practices, improving emergency-response knowledge, and developing sustainable food-allergy awareness interventions for university students across Nigeria.
