Effect of Food Safety Education on Safe Food Preparation Practices among Household Food Handlers in Nigeria

 

Abstract

Food safety is an important public health concern because unsafe food preparation practices can contribute to contamination and transmission of foodborne diseases. Household food handlers play a critical role in protecting family members from foodborne illnesses because they are commonly responsible for purchasing, cleaning, preparing, cooking, serving, and handling food within the household. Food safety education provides household food handlers with knowledge about foodborne hazards, personal hygiene, handwashing, prevention of cross-contamination, safe food preparation, appropriate cooking practices, safe handling of raw and cooked foods, proper cleaning of utensils and food-contact surfaces, and appropriate storage and reheating of prepared foods. Safe food preparation practices refer to behaviours adopted during food preparation to minimize contamination and reduce the risk of foodborne illness, including proper hand hygiene, washing of food items where appropriate, separation of raw and cooked foods, adequate cooking, use of clean utensils and surfaces, prevention of cross-contamination, safe handling of leftovers, and appropriate reheating of previously prepared foods. In Nigeria, inadequate knowledge of food safety, misconceptions about food preparation, limited access to clean water and sanitation facilities, household resource constraints, and traditional food-handling practices may affect the adoption of appropriate food safety behaviours. Effective food safety education may improve household food handlers' knowledge, risk perception, and practical skills and encourage the adoption of safer food preparation practices. Against this background, this study investigates the effect of food safety education on safe food preparation practices among household food handlers in Nigeria. The study is anchored on the Health Belief Model, Social Cognitive Theory, and Knowledge-Attitude-Practice framework. The Health Belief Model explains preventive health behaviour through perceived susceptibility, perceived severity, perceived benefits, perceived barriers, and cues to action, providing a basis for understanding household food handlers' adoption of safe food preparation practices. Social Cognitive Theory emphasizes the interaction between knowledge, self-efficacy, social influences, behavioural capabilities, and environmental conditions in shaping food safety behaviour. The Knowledge-Attitude-Practice framework provides a basis for examining how improved knowledge and attitudes resulting from food safety education may influence safe food preparation practices. Collectively, these theoretical perspectives provide a suitable framework for explaining how food safety education may influence safe food preparation practices among household food handlers in Nigeria. The study will adopt a quantitative quasi-experimental research design. Primary data will be collected from household food handlers in selected communities in Nigeria using a structured interviewer-administered or self-administered questionnaire and an observation checklist for selected food preparation practices where feasible. A multistage sampling technique will be employed to select states, local government areas, communities, households, and eligible household food handlers. Where feasible, selected household groups or communities will be assigned to intervention and comparison groups. Participants in the intervention group will receive structured food safety education covering foodborne diseases, food contamination, personal hygiene, proper handwashing, safe preparation of raw and cooked foods, prevention of cross-contamination, cleaning and sanitation of utensils and food-contact surfaces, adequate cooking, safe reheating, and appropriate handling of leftovers. Safe food preparation practices will be assessed using indicators such as proper hand hygiene before and during food preparation, use of clean utensils and surfaces, separation of raw and cooked foods, adequate cooking of food, appropriate washing and handling of food items, prevention of cross-contamination, safe handling of leftovers, and appropriate reheating practices. Descriptive statistics will be used to summarize participants' sociodemographic characteristics, food safety knowledge, exposure to education, and safe food preparation practices. Inferential statistical techniques, including chi-square tests, paired-sample tests, independent-sample tests, and logistic or multiple regression analysis, will be used to determine the effect of food safety education on safe food preparation practices. Appropriate diagnostic tests will also be conducted to assess the reliability of the research instrument, model assumptions, goodness of fit, and robustness of the findings. The study is expected to find that food safety education has a significant positive effect on safe food preparation practices among household food handlers in Nigeria. Household food handlers exposed to structured food safety education are expected to demonstrate improved knowledge of foodborne hazards and greater adoption of appropriate food preparation practices. Education may improve hand hygiene, encourage separation of raw and cooked foods, strengthen prevention of cross-contamination, promote adequate cooking, improve cleaning of food-contact surfaces and utensils, and encourage safer handling and reheating of leftovers. However, education alone may not guarantee sustained safe food preparation practices because household food handlers may continue to face barriers such as limited access to clean water, inadequate sanitation facilities, financial constraints, limited kitchen facilities, household crowding, and established traditional food-handling practices. Consequently, food safety education is expected to be most effective when supported by access to clean water, adequate sanitation facilities, appropriate kitchen equipment, reliable food safety information, and community-based environmental health programmes. The study is expected to contribute to the literature on food safety, foodborne disease prevention, household health, environmental health, nutrition, health education, and public health in Nigeria by providing empirical evidence on the effect of food safety education on safe food preparation practices among household food handlers. The findings will provide useful information to the Federal Ministry of Health and Social Welfare, National Agency for Food and Drug Administration and Control, state ministries of health, local government health authorities, environmental health officers, community health workers, nutrition professionals, public health practitioners, development partners, and policymakers regarding strategies for strengthening household food safety. The study will also provide evidence-based recommendations for integrating food safety education into community health programmes, improving household food hygiene knowledge, strengthening practical food preparation skills, promoting access to clean water and sanitation, addressing unsafe traditional food-handling practices, and reducing the risk of foodborne diseases among households across Nigeria.
