Impact of Food-Delivery Hygiene Awareness on Food-Safety Practices among Online Food Vendors in Nigeria

 

Abstract

Food delivery has become an increasingly important component of the food-service sector in Nigeria as consumers increasingly obtain prepared meals through online platforms, social media, mobile applications, and direct delivery services. While online food vending provides convenience and expands opportunities for food businesses, inadequate hygiene during food preparation, packaging, storage, transportation, and delivery may increase the risk of food contamination and foodborne illness. Online food vendors may face challenges related to personal hygiene, environmental sanitation, food-temperature control, packaging materials, handling practices, delivery containers, transportation conditions, and prolonged food exposure during delivery. Food-delivery hygiene awareness provides an opportunity to improve vendors' understanding of hygiene requirements throughout the food-delivery process and promote safer food-handling practices. Against this background, this study investigates the impact of food-delivery hygiene awareness on food-safety practices among online food vendors in Nigeria. The study will be anchored on the Health Belief Model, Social Cognitive Theory, and Social Ecological Model. The Health Belief Model explains how food vendors' perceptions of food contamination risks, perceived severity of foodborne illness, perceived benefits of maintaining hygiene, perceived barriers, self-efficacy, and cues to action may influence their food-safety practices. Social Cognitive Theory emphasizes observational learning, behavioural modelling, self-efficacy, reinforcement, and environmental influences in developing and maintaining safe food-handling behaviours. The Social Ecological Model highlights the influence of individual knowledge, business practices, customers, delivery personnel, food-service environments, regulatory requirements, socioeconomic conditions, and broader community factors on food-safety practices. Collectively, these theoretical perspectives provide a suitable framework for explaining how food-delivery hygiene awareness may influence food-safety practices among online food vendors in Nigeria. The study will adopt a quantitative quasi-experimental or analytical cross-sectional research design. The study population will comprise registered and identifiable online food vendors who prepare and sell ready-to-eat food through social media platforms, food-delivery applications, websites, or other digital channels in selected urban and semi-urban areas across Nigeria. A multistage sampling technique will be used to select geopolitical zones, states, cities, local government areas, and eligible online food vendors. Food-delivery hygiene awareness will be assessed using indicators such as knowledge of personal hygiene, handwashing, food-contact surface sanitation, separation of raw and cooked foods, safe food storage, temperature control, appropriate packaging, prevention of cross-contamination, hygienic food transportation, cleanliness of delivery containers, protection of food during transportation, delivery-time management, handling by delivery personnel, environmental sanitation, food-label information, and procedures for managing returned or delayed food. Food-safety practices will be assessed using indicators such as hand hygiene, use of clean protective clothing, sanitation of food-preparation areas and utensils, separation of raw and cooked foods, safe cooking and storage practices, appropriate temperature control, hygienic packaging, prevention of cross-contamination, cleaning and disinfection of delivery containers, protection of food from dust and other contaminants, appropriate transportation conditions, monitoring of delivery time, safe handling by delivery personnel, and appropriate disposal of contaminated or spoiled food. Data will be collected using structured questionnaires, food-safety knowledge assessment tools, standardized observation checklists, vendor practice assessments, food-premises inspection records where available, and pre-test and post-test assessments where a quasi-experimental intervention is adopted. Descriptive statistics will be used to summarize vendors' demographic and business characteristics, types of food sold, delivery methods, sources of food-safety information, hygiene awareness, and food-safety practices. Inferential statistical techniques, including chi-square tests, paired and independent t-tests, correlation analysis, and logistic or multiple regression analysis where appropriate, will be used to determine the impact of food-delivery hygiene awareness on food-safety practices. Where a quasi-experimental design is adopted, food-safety practice scores before and after the educational intervention may be compared with those of a comparison group to determine changes associated with the intervention. Diagnostic tests will also be conducted to assess the reliability, validity, and robustness of the findings. The study is expected to find that food-delivery hygiene awareness has a significant positive impact on food-safety practices among online food vendors in Nigeria. Vendors exposed to structured, practical, evidence-based, and context-specific food-delivery hygiene education are expected to demonstrate safer food-handling practices than vendors without comparable exposure. Increased awareness may improve vendors' understanding of contamination risks during food preparation, packaging, storage, transportation, and delivery. It may also encourage better personal hygiene, appropriate temperature control, hygienic packaging, prevention of cross-contamination, and improved sanitation of food-delivery equipment and containers. Practical education may further improve vendors' ability to identify hygiene risks associated with delayed deliveries, inappropriate storage temperatures, contaminated surfaces, and unsafe handling by delivery personnel. However, limited resources, inadequate access to clean water and sanitation facilities, high operating costs, pressure to meet delivery times, inadequate food-storage equipment, limited regulatory oversight, poor food-safety knowledge among delivery personnel, and weak compliance monitoring may reduce the effectiveness of awareness alone. The study therefore expects accessible, practical, sustained, and regulatory-supported food-delivery hygiene awareness to contribute significantly to improved food-safety practices among online food vendors in Nigeria. The study is expected to contribute to the literature on food-delivery hygiene, food safety, online food vending, foodborne disease prevention, food hygiene education, environmental health, digital food services, food handling, public health, and consumer protection in Nigeria. The findings will provide useful information to the Federal Ministry of Health and Social Welfare, National Agency for Food and Drug Administration and Control, state ministries of health, environmental health authorities, local government health departments, food vendors, online food-delivery platforms, delivery companies, food-safety professionals, public health practitioners, development partners, and policymakers regarding strategies for strengthening food safety within the growing online food-service sector. The study will also provide evidence-based recommendations for integrating food-delivery hygiene education into vendor registration and training programmes, strengthening hygiene inspection and monitoring, improving food packaging and temperature-control practices, promoting food-safety standards among delivery personnel, strengthening collaboration between food vendors and online delivery platforms, and developing sustainable food-safety interventions that protect consumers of online food services across Nigeria.
