Impact of Dishwashing Education on Safe Utensil-Cleaning Practices among Household Food Handlers in Nigeria

 

Abstract

Safe dishwashing practices are an important component of household food safety because improperly cleaned utensils, plates, cups, pots, cutting boards, and other food-contact surfaces may contribute to the transmission of foodborne pathogens. Household food handlers play a central role in maintaining utensil hygiene, yet inadequate knowledge of effective dishwashing procedures, unsafe water use, poor cleaning practices, inappropriate detergents, inadequate rinsing, and improper drying or storage may increase the risk of contamination. Dishwashing education provides an opportunity to improve household food handlers' knowledge and skills regarding appropriate utensil-cleaning procedures and promote safer food-contact surface hygiene. Against this background, this study investigates the impact of dishwashing education on safe utensil-cleaning practices among household food handlers in Nigeria. The study will be anchored on the Health Belief Model, Social Cognitive Theory, and Theory of Planned Behavior. The Health Belief Model explains how household food handlers' perceptions of susceptibility to foodborne illness, perceived severity of food contamination, perceived benefits of proper dishwashing, perceived barriers, and cues to action may influence utensil-cleaning practices. Social Cognitive Theory emphasizes observational learning, behavioural modelling, self-efficacy, reinforcement, and household environmental influences in developing and maintaining appropriate dishwashing behaviours. The Theory of Planned Behavior explains how food handlers' attitudes toward utensil hygiene, perceived expectations from household members, and perceived behavioural control may influence their intentions and actual cleaning practices. Collectively, these theoretical perspectives provide a suitable framework for explaining how dishwashing education may influence safe utensil-cleaning practices among household food handlers in Nigeria. The study will adopt a quantitative quasi-experimental or analytical cross-sectional research design. The study population will comprise household food handlers responsible for regular meal preparation and utensil cleaning in selected urban, semi-urban, and rural communities across Nigeria. A multistage sampling technique will be used to select geopolitical zones, states, local government areas, communities, households, and eligible food handlers. Dishwashing education will be assessed using indicators such as exposure to dishwashing education sessions, frequency and duration of education, knowledge of appropriate washing procedures, awareness of the importance of cleaning food-contact surfaces, knowledge of appropriate detergent use, understanding of rinsing procedures, awareness of safe water requirements, knowledge of appropriate drying methods, understanding of cross-contamination prevention, and knowledge of proper storage of cleaned utensils. Safe utensil-cleaning practices will be assessed using indicators such as removal of food residues before washing, use of appropriate cleaning agents, washing utensils with clean water, appropriate scrubbing of food-contact surfaces, adequate rinsing, separation of cleaning materials for different household purposes where appropriate, prevention of cross-contamination, appropriate drying of utensils, hygienic storage of cleaned utensils, regular cleaning of dishwashing areas and sponges or cleaning materials, and appropriate replacement of worn or contaminated cleaning materials. Data will be collected using structured questionnaires, dishwashing knowledge assessment tools, utensil-cleaning practice instruments, household observation checklists, and pre-test and post-test assessments where a quasi-experimental intervention is adopted. Descriptive statistics will be used to summarize participants' demographic and household characteristics, water sources, dishwashing facilities, exposure to education, and utensil-cleaning practices. Inferential statistical techniques, including chi-square tests, t-tests, correlation analysis, and logistic or multiple regression analysis where appropriate, will be used to determine the impact of dishwashing education on safe utensil-cleaning practices. Where a quasi-experimental design is adopted, utensil-cleaning practice scores before and after the educational intervention may be compared with those of a comparison group to determine changes associated with the intervention. Diagnostic tests will also be conducted to assess the reliability, validity, and robustness of the findings. The study is expected to find that dishwashing education has a significant positive impact on safe utensil-cleaning practices among household food handlers in Nigeria. Food handlers exposed to structured and practical dishwashing education are expected to demonstrate improved knowledge and safer utensil-cleaning practices than food handlers without comparable exposure. Education may improve participants' ability to remove food residues, use appropriate cleaning agents, wash and rinse utensils properly, prevent cross-contamination, maintain clean dishwashing areas, and store cleaned utensils hygienically. Practical demonstrations using commonly used household utensils, locally available cleaning materials, and appropriate water-use methods may strengthen participants' ability to apply safe dishwashing procedures. However, inadequate access to clean water, limited household washing facilities, high cost of cleaning products, overcrowding, poor drainage, and traditional cleaning practices may reduce the effectiveness of education alone. The study therefore expects continuous, practical, culturally appropriate, and accessible dishwashing education, supported by improved access to safe water and adequate household sanitation facilities, to contribute significantly to improved safe utensil-cleaning practices among household food handlers in Nigeria. The study is expected to contribute to the literature on household food safety, utensil hygiene, dishwashing practices, foodborne disease prevention, environmental sanitation, hygiene education, household health, community health, and public health in Nigeria. The findings will provide useful information to the Federal Ministry of Health and Social Welfare, National Primary Health Care Development Agency, state ministries of health, environmental health authorities, primary healthcare centres, nutritionists, food-safety professionals, community health workers, public health practitioners, development partners, and policymakers regarding strategies for improving household food hygiene. The study will also provide evidence-based recommendations for integrating dishwashing education into community food-safety programmes, improving awareness of safe utensil-cleaning procedures, promoting hygienic cleaning and storage practices, strengthening household hygiene education, improving access to safe water and sanitation facilities, and developing sustainable interventions for preventing food contamination within Nigerian households.
