Effect of Vegetable Cooking Education on Vegetable Preparation Practices among Household Food Handlers in Nigeria

 

Abstract

Vegetables are important components of a healthy diet because they provide essential vitamins, minerals, dietary fibre, antioxidants, and other nutrients that support health and help reduce the risk of diet-related diseases. However, inappropriate preparation and cooking practices may reduce the nutritional quality of vegetables through excessive washing, prolonged boiling, excessive use of water, overcooking, or improper storage before preparation. Household food handlers play an important role in determining how vegetables are cleaned, prepared, cooked, and served within households. Limited knowledge of nutrient-preserving vegetable preparation methods may therefore contribute to poor vegetable preparation practices. Vegetable cooking education provides an opportunity to improve food handlers' knowledge and skills regarding appropriate vegetable preparation and cooking techniques. Against this background, this study investigates the effect of vegetable cooking education on vegetable preparation practices among household food handlers in Nigeria. The study will be anchored on the Health Belief Model, Social Cognitive Theory, and Theory of Planned Behavior. The Health Belief Model explains how household food handlers' perceptions of the health benefits of vegetables, perceived consequences of poor preparation, perceived benefits of appropriate cooking methods, perceived barriers, and cues to action may influence their preparation practices. Social Cognitive Theory emphasizes observational learning, behavioural modelling, self-efficacy, reinforcement, and household environmental influences in developing and maintaining appropriate vegetable preparation behaviours. The Theory of Planned Behavior explains how food handlers' attitudes toward healthy vegetable preparation, perceived expectations from household members, and perceived behavioural control may influence their intentions and actual practices. Collectively, these theoretical perspectives provide a suitable framework for explaining how vegetable cooking education may influence vegetable preparation practices among household food handlers in Nigeria. The study will adopt a quantitative quasi-experimental or analytical cross-sectional research design. The study population will comprise household food handlers responsible for the preparation of vegetables and regular household meals in selected urban, semi-urban, and rural communities across Nigeria. A multistage sampling technique will be used to select geopolitical zones, states, local government areas, communities, households, and eligible food handlers. Vegetable cooking education will be assessed using indicators such as exposure to vegetable preparation education sessions, frequency and duration of education, knowledge of appropriate vegetable washing procedures, awareness of nutrient-preserving preparation methods, knowledge of appropriate cutting and chopping practices, awareness of the effects of prolonged cooking, knowledge of appropriate cooking methods, understanding of appropriate cooking time, awareness of nutrient losses associated with excessive water use, knowledge of appropriate storage before and after preparation, and awareness of hygienic vegetable handling practices. Vegetable preparation practices will be assessed using indicators such as appropriate washing of vegetables, hygienic handling, proper cutting and chopping, avoidance of unnecessary soaking, use of appropriate cooking methods, reduction of prolonged cooking, appropriate use of cooking water, prevention of nutrient loss, appropriate use of cooking oil and salt, safe storage of prepared vegetables, and regular adoption of nutrient-preserving vegetable preparation practices. Data will be collected using structured questionnaires, vegetable preparation knowledge assessment tools, food preparation practice instruments, household observation checklists, and pre-test and post-test assessments where a quasi-experimental intervention is adopted. Descriptive statistics will be used to summarize participants' demographic and household characteristics, vegetable consumption patterns, cooking responsibilities, exposure to education, and vegetable preparation practices. Inferential statistical techniques, including chi-square tests, t-tests, correlation analysis, and logistic or multiple regression analysis where appropriate, will be used to determine the effect of vegetable cooking education on vegetable preparation practices. Where a quasi-experimental design is adopted, vegetable preparation practice scores before and after the educational intervention may be compared with those of a comparison group to determine changes associated with the intervention. Diagnostic tests will also be conducted to assess the reliability, validity, and robustness of the findings. The study is expected to find that vegetable cooking education has a significant positive effect on vegetable preparation practices among household food handlers in Nigeria. Food handlers exposed to structured and practical vegetable cooking education are expected to demonstrate improved knowledge and greater adoption of nutrient-preserving and hygienic vegetable preparation practices than food handlers without comparable exposure. Education may improve participants' ability to wash vegetables appropriately, minimize unnecessary soaking, use suitable cooking methods, reduce prolonged cooking, control the use of cooking water, and maintain safe storage practices. Practical demonstrations using commonly consumed Nigerian vegetables and locally available cooking equipment may further strengthen food handlers' confidence in applying appropriate preparation techniques. However, cultural cooking traditions, household food preferences, limited cooking facilities, fuel costs, time constraints, availability of vegetables, and established preparation habits may limit the effectiveness of education alone. The study therefore expects continuous, practical, culturally appropriate, and accessible vegetable cooking education, supported by appropriate household food-preparation resources, to contribute significantly to improved vegetable preparation practices among household food handlers in Nigeria. The study is expected to contribute to the literature on nutrition education, vegetable preparation, household food handling, food hygiene, nutrient preservation, dietary behaviour, healthy cooking, community nutrition, food safety, and public health in Nigeria. The findings will provide useful information to the Federal Ministry of Health and Social Welfare, National Primary Health Care Development Agency, state ministries of health, primary healthcare centres, nutritionists, dietitians, community health workers, public health practitioners, household food handlers, development partners, and policymakers regarding strategies for improving household vegetable preparation practices. The study will also provide evidence-based recommendations for integrating vegetable cooking education into community nutrition and primary healthcare programmes, promoting practical demonstrations using locally available vegetables, improving awareness of nutrient-preserving cooking techniques, strengthening household nutrition counselling, and developing sustainable interventions for improving vegetable preparation practices across Nigeria.
