Effect of Healthy Cooking Methods Education on Healthy Food Preparation Practices among Household Food Handlers in Nigeria
Abstract
Food preparation practices within households play an important role in determining dietary quality and may influence the nutritional and health outcomes of family members. Cooking methods such as deep frying, prolonged boiling, excessive use of oil, repeated use of cooking oil, and overcooking may reduce the nutritional quality of foods or contribute to excessive intake of unhealthy fats and other dietary risks. Household food handlers may also have limited knowledge of healthier cooking techniques, appropriate oil use, nutrient-preserving methods, and safe food preparation practices. Healthy cooking methods education provides an opportunity to improve food handlers' knowledge and skills and encourage the adoption of healthier methods of preparing meals. Against this background, this study investigates the effect of healthy cooking methods education on healthy food preparation practices among household food handlers in Nigeria. The study will be anchored on the Health Belief Model, Social Cognitive Theory, and Theory of Planned Behavior. The Health Belief Model explains how household food handlers' perceptions of susceptibility to diet-related health problems, perceived severity, perceived benefits of healthy cooking, perceived barriers, and cues to action may influence food preparation practices. Social Cognitive Theory emphasizes observational learning, behavioural modelling, self-efficacy, reinforcement, and household environmental influences in developing and maintaining healthy cooking behaviours. The Theory of Planned Behavior explains how attitudes toward healthy cooking methods, perceived expectations from household members, and perceived behavioural control may influence food handlers' intentions and actual food preparation practices. Collectively, these theoretical perspectives provide a suitable framework for explaining how healthy cooking methods education may influence healthy food preparation practices among household food handlers in Nigeria. The study will adopt a quantitative quasi-experimental or analytical cross-sectional research design. The study population will comprise household food handlers responsible for regular meal preparation in selected urban, semi-urban, and rural communities across Nigeria. A multistage sampling technique will be used to select geopolitical zones, states, local government areas, communities, households, and eligible food handlers. Healthy cooking methods education will be assessed using indicators such as exposure to healthy cooking education sessions, frequency and duration of education, knowledge of steaming, grilling, baking, boiling, stewing, and other healthier cooking methods, awareness of appropriate oil quantities, knowledge of the health implications of excessive oil use, awareness of risks associated with repeated oil use, knowledge of nutrient-preserving cooking practices, understanding of appropriate cooking time and temperature, awareness of healthier seasoning practices, and knowledge of appropriate food preparation techniques. Healthy food preparation practices will be assessed using indicators such as use of healthier cooking methods, reduction of deep frying, appropriate use of cooking oil, avoidance of repeated use of cooking oil, appropriate cooking duration, preservation of nutrients during preparation, use of vegetables and other nutrient-rich ingredients, reduction of excessive salt and unhealthy seasonings, appropriate food portion preparation, and regular adoption of healthier cooking practices. Data will be collected using structured questionnaires, healthy cooking knowledge assessment tools, food preparation practice instruments, household observation checklists, cooking-method observation tools, and pre-test and post-test assessments where a quasi-experimental intervention is adopted. Descriptive statistics will be used to summarize participants' demographic and household characteristics, cooking patterns, food preparation responsibilities, exposure to education, and healthy cooking practices. Inferential statistical techniques, including chi-square tests, t-tests, correlation analysis, and logistic or multiple regression analysis where appropriate, will be used to determine the effect of healthy cooking methods education on healthy food preparation practices. Where a quasi-experimental design is adopted, healthy food preparation practice scores before and after the educational intervention may be compared with those of a comparison group to determine changes associated with the intervention. Diagnostic tests will also be conducted to assess the reliability, validity, and robustness of the findings. The study is expected to find that healthy cooking methods education has a significant positive effect on healthy food preparation practices among household food handlers in Nigeria. Food handlers exposed to structured and practical healthy cooking education are expected to demonstrate greater adoption of healthier cooking methods than food handlers without comparable exposure. Education may improve participants' ability to select appropriate cooking methods, reduce excessive oil use, avoid repeated use of cooking oil, preserve nutrients during food preparation, and reduce excessive salt and unhealthy seasonings. Practical demonstrations using commonly consumed Nigerian foods and familiar cooking equipment may strengthen participants' ability to apply healthier techniques in their daily meal preparation. However, food preferences, cultural cooking traditions, cost and availability of cooking equipment, time constraints, household preferences, fuel costs, and perceptions that certain cooking methods produce less desirable meals may limit the effectiveness of education alone. The study therefore expects continuous, practical, culturally appropriate, and accessible healthy cooking methods education, supported by affordable cooking resources and supportive household food environments, to contribute significantly to improved healthy food preparation practices among household food handlers in Nigeria. The study is expected to contribute to the literature on nutrition education, healthy cooking, household food preparation, dietary behaviour, food quality, non-communicable disease prevention, community nutrition, health promotion, household health, and public health in Nigeria. The findings will provide useful information to the Federal Ministry of Health and Social Welfare, National Primary Health Care Development Agency, state ministries of health, primary healthcare centres, nutritionists, dietitians, community health workers, public health practitioners, healthcare professionals, women's and community organizations, development partners, and policymakers regarding strategies for improving household food preparation practices. The study will also provide evidence-based recommendations for integrating healthy cooking education into community nutrition and primary healthcare programmes, promoting practical demonstrations using locally available foods, improving awareness of healthier cooking techniques, reducing unhealthy oil and salt use, strengthening household nutrition counselling, and developing sustainable healthy food preparation interventions across Nigeria.
