Abstract
Shared kitchens are increasingly important in community food-production activities because they provide collective spaces where individuals and groups can prepare, process, package, and distribute food. Their architectural design can significantly influence workflow, hygiene, safety, social interaction, and the efficiency of food-related activities. Poorly designed shared kitchens may create congestion, cross-contamination risks, inadequate storage, and conflicts between different users. This study examines the influence of shared kitchen design on community food-production activities and evaluates how spatial organization supports effective and safe communal food production. The study focuses on the spatial organization of key kitchen areas, including food preparation zones, cooking areas, washing facilities, storage spaces, packaging areas, waste collection points, and circulation routes. Attention is given to the relationship and adjacency between these functional areas and how they support the sequential movement of food, people, equipment, and waste. The study assesses whether the layout allows different users to undertake activities efficiently while minimizing unnecessary movement and operational conflicts. The design of storage and equipment facilities can also influence the efficiency of community food-production activities. Adequate provision for dry storage, refrigeration, cooking equipment, utensils, packaging materials, and cleaning supplies can reduce operational interruptions and improve workflow. The study considers the accessibility and location of these facilities in relation to preparation and production areas. It also examines how flexible spaces and movable equipment can accommodate different food-production activities and varying group sizes. Shared kitchens have an important social dimension because they bring different users together for collaborative food preparation, skills development, entrepreneurship, and community interaction. The study therefore considers how spatial arrangements can support communication and cooperation while maintaining appropriate levels of privacy, safety, and operational separation. Seating areas, teaching spaces, communal work surfaces, and observation points are assessed in relation to their potential contribution to inclusive and participatory food-production activities. The study aims to provide a better understanding of how shared kitchen design influences community food-production activities. It is expected to identify design deficiencies and establish spatial planning strategies for improving workflow, hygiene, safety, storage, accessibility, flexibility, and social interaction. The findings will be useful to architects, community planners, food-production organizations, and development agencies in designing shared kitchen facilities that support efficient, hygienic, inclusive, and sustainable community-based food production.
