Abstract
Pepper is an important horticultural crop that contributes to household food supply, income generation, and agricultural marketing. However, fresh pepper is highly perishable and can experience significant quality deterioration and losses when appropriate processing and preservation methods are not used. Improved pepper processing methods such as proper cleaning, sorting, drying, grinding, milling, packaging, and storage can extend shelf life, maintain product quality, improve food safety, and increase the market value of pepper products. Agricultural extension can provide farmers with relevant information, practical training, demonstrations, and technical guidance to encourage the adoption of improved processing methods. This study will examine the effect of agricultural extension on farmers’ adoption of improved pepper processing methods. It will assess farmers’ exposure to agricultural extension services and determine how such exposure influences their knowledge and adoption of improved pepper processing practices. The study will also examine the extent to which farmers apply improved processing methods and identify the major challenges affecting their adoption. The study will focus on farmers’ adoption of improved methods of pepper cleaning, sorting, drying, grinding, milling, preservation, packaging, and storage. It will examine practices such as hygienic handling, moisture control, appropriate drying techniques, contamination prevention, proper packaging, pest management, and the use of improved processing equipment. The study will also consider farmers’ access to extension contacts, practical demonstrations, processing information, equipment, finance, storage facilities, and markets for processed pepper products. A quantitative research approach will be adopted for the study. Data will be collected from farmers using structured questionnaires designed to obtain information on their exposure to agricultural extension services, knowledge of improved pepper processing methods, and level of adoption. The collected data will be analysed using descriptive statistics such as frequencies, percentages, means, and standard deviations, while correlation and regression analysis may be used to examine the relationship between agricultural extension and farmers’ adoption of improved pepper processing methods. The study is expected to reveal that farmers with greater exposure to agricultural extension services may demonstrate higher levels of knowledge and adoption of improved pepper processing methods. Extension services may improve farmers’ ability to apply appropriate drying techniques, maintain processing hygiene, control moisture, prevent contamination, use improved equipment, and preserve processed pepper products. However, inadequate processing facilities, high equipment costs, limited access to finance, insufficient technical support, poor storage facilities, and limited extension contact may constrain adoption. The study will be useful to pepper farmers, agricultural extension agents, agro-processors, farmer organisations, agricultural development agencies, government institutions, policymakers, and researchers. The findings may provide useful information on the contribution of agricultural extension to improved pepper processing and post-harvest management. Extension organisations may use the findings to strengthen practical training and demonstrations, while agricultural development agencies and farmer organisations may use the information to improve access to appropriate processing technologies and technical support. The study concludes that agricultural extension can contribute to farmers’ adoption of improved pepper processing methods by providing relevant knowledge, practical demonstrations, and technical guidance. It is therefore recommended that extension programmes strengthen training on improved pepper processing, drying, hygiene, preservation, packaging, storage, and equipment use. Relevant stakeholders should also support farmers with affordable processing technologies, appropriate storage facilities, technical assistance, and access to markets for processed pepper products to encourage wider adoption and reduce post-harvest losses.
